This is quite possibly the easiest recipe. It looks a little fancy with the colors from the broccoli slaw and shrimp. I serve it as is to keep it low carb, but it is great with rice or Chinese noodles.
Recipe (serves 2):
1 TBS minced garlic
1 ts olive oil
8-10 oz de-veined shrimp, tails removed
12 oz package broccoli slaw
1/2 cup broth (chicken or vegetable)
6 TBS Ken’s Steakhouse Lite Asian Sesame Dressing
1/4 ts red pepper flakes
1/4 ts salt
Heat garlic in 1 ts olive oil in large pan on medium high for 1 minute or until the garlic starts to become fragrant. Add shrimp and cook until translucent.
Remove shrimp from pan. Add broccoli slaw and broth. Cook for 5-10 minutes or until broccoli slaw become tender and liquid has evaporated. Add salt, dressing, and red pepper flakes. Heat until warmed. Add shrimp.
Serve alone or with rice or Chinese noodles. Makes 2 servings.
